Easy and Delicious Ground Chicken Meatloaf for Two
Here’s an easy Cooking for Two entree you can make from a half pound of ground chicken. Use the other half pound to make Ground Chicken Teriyaki Bowls another night. And that’s two dinners for two – done!
We eat a lot of chicken, for a few good reasons:
- Especially when we’re trying to eat healthier or lose a few pounds, chicken is lower in calories, saturated (“bad”) fat, and cholesterol than red meat. For us, ground chicken is the healthier choice.
- Chicken is infinitely versatile. It can be used to make dishes from almost every culture you can think of. Italian, Greek, Mexican, Indian, Asian – the list is endless! And there are ways to use chicken in every meal (think chicken sausage omelettes for breakfast, or chicken sandwiches and salads for lunch).
- It can also be quite a bit less expensive – which is more of a factor to us than ever in these days of high food prices. On a recent trip to the grocery store, ground chicken was about half the cost of ground beef.
You can make an easy and delicious meatloaf for two from one half a pound of ground chicken, plus ten simple ingredients:
You probably have most of these items on hand right now.
Measure everything into a bowl with your ground chicken. Mix it all together. Form the mixture into a small loaf. And bake, with a couple of potatoes for a side. Add a vegetable, like green beans, broccoli, or Brussels sprouts. Viola! Dinner for two couldn’t be easier. Or more tasty!

Ground Chicken Meatloaf
This easy and delicious dinner entree for two can also be made using ground turkey or lean ground beef. Freeze the other half of the one-pound package, or use it to make another Cooking for Two recipe (like our Ground Chicken Teriyaki Bowls) the next night!
Ingredients
- 1/2 pound ground chicken
- 1/3 cup plain breadcrumbs
- 1 egg
- 1/2 cup grated carrots
- 1/4 cup finely minced onion
- 1 tablespoon plus 1/4 cup ketchup (divided)
- 1 teaspoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 375°
- Add all ingredients (except extra ¼ cup ketchup) to a medium bowl, mix thoroughly
- Form into a loaf shape and place in a bread pan or shallow baking dish
- Bake for 45 minutes
- Remove from oven, spread extra ¼ cup ketchup over top of loaf
- Bake for about 10-15 minutes longer (until ketchup is like a sticky glaze)
Notes
If you are serving baked potatos as a side, place them in the oven at the same time as the meatloaf. They should be done about the same time, depending on the size of the potatos.
