Super Fast Fajitas for Two

Ingredients
  

For the Taco Seasoning:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1-1/2 teaspoons cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

For the Fajitas:

  • 4 chicken tenders, thawed
  • 1/2 large green pepper
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1 small onion
  • olive oil
  • 4 flour tortillas (soft taco size)
  • 1 lime, cut in wedges
  • Other toppings or sides of your choice (such as shredded cheese, sour cream, pico de gallo or salsa, avocado, cilantro, rice, etc.)

Instructions
 

  • Measure the spices for the taco seasoning into a small bowl and mix thoroughly.
  • Sprinkle the seasoning liberally over the chicken tenders, along with a little extra cumin, and massage into the chicken with your hands. Set aside.
  • Cut the peppers and onions into thin slices.
  • Prepare the other ingredients you are using for your fajitas. (E.g. take out tortillas, shred cheese, cut up avocado, prepare rice, chop cilantro, etc.)
  • Heat a little olive oil in a large skillet over medium-high heat.
  • Add the peppers and onions and spread into an even layer. Wait until the vegetables start to blacken before stirring.
  • Remove cooked veggies from the pan and cover to keep warm.
  • Drizzle more oil into the pan, and add the chicken tenders. Wait until they are browned on the bottom before turning.
  • After you turn the chicken tenders, use a wooden spoon or the heel of a metal spatuala to "smash" the tenders. When they are cooked through, remove to a cutting board and slice thinly at an angle.
  • Assemble your fajitas, add a squeeze of lime and your favorite toppings, and enjoy!

Notes

Mix up a double (or triple) batch of the taco seasoning blend and keep it in a tightly sealed container. If you want a little more heat, increase the amount of crushed red pepper. To use for fajita seasoning, add some extra cumin to your dish.
