This easy and delicious dinner entree for two can also be made using ground turkey or lean ground beef. Freeze the other half of the one-pound package, or use it to make another Cooking for Two recipe (like our Ground Chicken Teriyaki Bowls) the next night!
Add all ingredients (except extra ¼ cup ketchup) to a medium bowl, mix thoroughly
Form into a loaf shape and place in a bread pan or shallow baking dish
Bake for 45 minutes
Remove from oven, spread extra ¼ cup ketchup over top of loaf
Bake for about 10-15 minutes longer (until ketchup is like a sticky glaze)
Notes
If you are serving baked potatos as a side, place them in the oven at the same time as the meatloaf. They should be done about the same time, depending on the size of the potatos.
